  • 4 large eggs
  • 4 cups brussel sprouts
  • ½ red onion diced
  • 4 strips low sodium bacon
  • 1 large sweet potato
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • Salt and pepper

Instructions
  1. Preheat oven to 350 degrees.
  2. Cut bacon into 1” pieces and cook over medium high heat. Remove cooked bacon and leave rendered fat in the skillet.
  3. While bacon is cooking, wash and half brussel sprouts, dice onion and cube sweet potato. Add to skillet and sautee until softened.
  4. Add bacon back in and sprinkle with oregano, thyme, salt and pepper.
  5. Make 4 wells in the veggie mix and crack 1 egg in each well. Bake for 10 minutes or until whites are firm. Remove from the oven and serve on the table straight from the skillet.
