Winter Vegetable Skillet with Eggs
Instructions
- Preheat oven to 350 degrees.
- Cut bacon into 1” pieces and cook over medium high heat. Remove cooked bacon and leave rendered fat in the skillet.
- While bacon is cooking, wash and half brussel sprouts, dice onion and cube sweet potato. Add to skillet and sautee until softened.
- Add bacon back in and sprinkle with oregano, thyme, salt and pepper.
- Make 4 wells in the veggie mix and crack 1 egg in each well. Bake for 10 minutes or until whites are firm. Remove from the oven and serve on the table straight from the skillet.
