Veggie Loaded Quesadilla + Easy Black Bean Dip

- 2 Tablespoons salsa
- 1 green onion
- 1/3 medium red bell pepper
- 2 cups spinach

- ½ cup canned black beans drained and rinsed
- ½ cup reduced-fat (“Made With 2%”) shredded cheddar

- 1 teaspoon oil

- 1 high fiber tortilla like Ole Xtreme Wellness
- lime juice, cumin, and/or cilantro Optional

Instructions
- Smash black beans and salsa together. Add in any optional flavor enhancers—lime juice, cumin, and/or cilantro.
- Small dice the onion and bell pepper. Heat oil over medium in a large nonstick pan. Saute peppers and onions until soft, about 2-3 minutes. Add spinach to wilt. Remove veggies from pan and set aside.
- Add tortilla to pan. On one half of the tortilla sprinkle half the cheese down as a base layer, top with sautéed veggies, add the remaining cheese, and fold the other half of the tortilla over it all. Heat through until cheese is melted, about 3-4 minutes, flipping over halfway.
- Remove from pan, slice into wedges, serve with dip and enjoy!
