Tuna Tossed Zucchini Ribbons

Ingredients
- 2 zucchini
- 1 pint cherry tomatoes
- 1 corn cob kernels removed
- 3 tablespoons olive oil
- 1/4 cup feta cheese
- 5 ounces canned tuna
- 1/4 red onion thinly sliced
- 1 lemon 1/2 of it juiced; save the other half for Thursday’s recipe!
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard

Instructions
- Spiralize zucchini into ribbons, using the thickest or next to thickest blade on your spiralizer.
- Cut corn kernels off the cob, slice tomatoes in halves and thinly slice red onion.
- Drain tuna
- Mix together dressing ingredients.
- Toss all ingredients in a mixing bowl and enjoy!
Recipe Notes
Tip: When shopping for tuna, look for brands that use dolphin safe and line catching fishing practices. Safe Catch Tuna is the lowest mercury brand and is available on Amazon and in some specialty food stores. If you are pregnant or trying to become pregnant, fish including canned light tuna, is encouraged to consume 2-3 times/week.
