Sweet Potato Tempeh Burrito

Ingredients
- 1 small sweet potato
- 1/2 onion
- 2 cloves garlic
- 1 tablespoon oil canola, olive oil, vegetable oil
- 1 teaspoon chili powder
- 1 teaspoons cumin
- 1 package tempeh
- 3 cups spinach
- 4 ounces white cheddar cheese
- 1 avocado
- 2 9-inch tortillas
- 1 lime
- sriracha (optional)

Instructions
- Small chop sweet potatoes, onions, garlic, and saute in oil. Crumble in tempeh and add cumin and chili powder. Season with Sriracha for spice. Cook until tempeh is soft.
- Add spinach to tempeh mixture and cook just until spinach wilts. Remove from heat.
- Shred cheese and slice avocado.
- Place cheese in center of tortilla, followed by filling. Fold bottom up and over filling, fold in sides and wrap up. Place burrito seam side down in pan and lightly toast the top and bottom of burrito. Enjoy!
