Sausage, Kale & White Bean Stew

Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic
- 1 shallot (or small onion)
- 1 teaspoon red chili flake
- 2 each chicken or pork sausages
- 32 ounces bone broth or chicken stock
- 1 bunch kale chopped
- 2 cans white beans drained and rinsed

Instructions
- Heat a soup pot over medium heat and add olive oil. Saute shallot, garlic and red chili flake for 2-3 minutes.
- Chop sausage into bite size peices and add to pan. Saute until you see some browning.
- Add broth and scrape up any bits off the bottom of the pan. Bring to a simmer and then add kale and beans. Add water as needed to provide more liquid if desired.
- Simmer for 10 minutes and then serve. Top with grated cheese and/or fresh herbs if desired.
