Ingredients
  • 1 tablespoon olive oil
  • 4 cloves garlic
  • 1 shallot (or small onion)
  • 1 teaspoon red chili flake
  • 2 each chicken or pork sausages
  • 32 ounces bone broth or chicken stock
  • 1 bunch kale chopped
  • 2 cans white beans drained and rinsed

Instructions
  1. Heat a soup pot over medium heat and add olive oil. Saute shallot, garlic and red chili flake for 2-3 minutes.
  2. Chop sausage into bite size peices and add to pan. Saute until you see some browning.
  3. Add broth and scrape up any bits off the bottom of the pan. Bring to a simmer and then add kale and beans. Add water as needed to provide more liquid if desired.
  4. Simmer for 10 minutes and then serve. Top with grated cheese and/or fresh herbs if desired.
