Shrimp and Penne with Marsala Red Sauce

Ingredients
  • 2 ounces 100% whole grain penne
  • ½ cup frozen broccoli
  • 1 teaspoon oil olive or avocado
  • ½ cup frozen bell pepper sliced
  • 1/2 teaspoon dried herbs—oregano, basil, Italian seasoning
  • ½ cup jarred red pasta sauce
  • 3 ounces frozen shrimp peeled and deveined
  • 1 Tablespoon marsala wine

  • 3 ounces frozen shrimp peeled and deveined
  • 1 Tablespoon marsala wine

Instructions
  1. Cook pasta according to directions on box. In the 2 minutes of cooking, add broccoli. Drain both the pasta and broccoli when finished.
  2. In a colander, run cool water over the shrimp to remove ice crystals.
  3. Heat oil in nonstick pan over medium heat. Saute pepper and herbs until pepper is softened, about 3-4 minutes.
  4. Add red sauce to peppers. If using uncooked shrimp, add them now. Bring sauce to a simmer before covering to cook for 3-4 minutes.
  5. Uncover the pan and add marsala. If using cooked shrimp, add them now. Simmer sauce and shrimp, uncovered, for one minute.
  6. Add pasta and toss to coat. Serve and enjoy!
