Rosemary White Bean Hummus Pitas

Ingredients
White Bean Hummus
  • 2 15-ounce cans white beans drained and rinsed
  • 1/4 cup Tahini
  • 1/4 cup vegetable broth or water
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • 1 tablespoon rosemary fresh, minced
Pita & Fixings
  • 1 pound whole wheat dough let dough sit out at room temperature for 30 minutes before using
  • flour for dusting
  • 1 tablespoon olive oil or canola
  • 1 cup purple cabbage shredded
  • 1 cup carrot shredded
  • 2 cups spinach or other salad greens
  • 1 cup sprouts
  • 4 ounces feta cheese

Instructions
White Bean Hummus
  1. Add all ingredients into a food processor and blend until creamy. Set aside.
Pita Bread
  1. Divide dough in half and roll each half out on floured surface into a circular shape. Roll out to about 1/4-inch thick.
  2. Heat 1/2 tablespoon oil over medium heat in a skillet and place one pita into the pan. Cook about 4 minutes on each side. Careful not to burn! Do the same with the last pita.
  3. While pitas cook, shred your cabbage and carrot.
  4. When pitas are done, slice in half and insert a knife into the cut side to pry open the pita.
  5. Spread the hummus inside pita on both sides and fill with veggies and feta. Enjoy!
