  • 1 head cauliflower
  • 1 bunch kale I prefer lacinato over curly kale
  • 2 teaspoon coconut oil
  • 1 tablespoon maple syrup
  • teaspoon Cajun seasoning
  • 2 teaspoons dried thyme
  • Salt and pepper
  • 1 cup cooked rice brown or wild
  • 2 carrots grated
  • 1 beet grated
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 3-4 radishes
  • 1 avocado
Dressing
  • 2 tablespoon Tahini
  • 1 lemon juiced
  • 1 clove garlic minced
  • Salt and pepper

Instructions
  1. Preheat oven to 400 degrees , chop cauliflower and place on baking sheet
  2. Mix coconut oil with syrup and drizzle onto cauliflower. Sprinkle with thyme and Cajun seasoning. Roast for 30 minutes tossing halfway through.
  3. While cauliflower is roasting, prepare dressing, cook rice and chop and grate vegetables.
  4. Remove roasted cauliflower and assemble in serving dish.
