Rainbow Cajun Cauliflower Bowl

Ingredients

- 1 head cauliflower
- 1 bunch kale I prefer lacinato over curly kale
- 2 teaspoon coconut oil
- 1 tablespoon maple syrup
- 1½ teaspoon Cajun seasoning
- 2 teaspoons dried thyme
- Salt and pepper
- 1 cup cooked rice brown or wild
- 2 carrots grated
- 1 beet grated
- 1 medium cucumber
- 1 cup cherry tomatoes
- 3-4 radishes
- 1 avocado
Dressing
- 2 tablespoon Tahini
- 1 lemon juiced
- 1 clove garlic minced
- Salt and pepper

Instructions
- Preheat oven to 400 degrees , chop cauliflower and place on baking sheet
- Mix coconut oil with syrup and drizzle onto cauliflower. Sprinkle with thyme and Cajun seasoning. Roast for 30 minutes tossing halfway through.
- While cauliflower is roasting, prepare dressing, cook rice and chop and grate vegetables.
- Remove roasted cauliflower and assemble in serving dish.
