  • 2 filets salmon
  • 1 cup orzo whole wheat if you can find it
  • 4 ounces pre-made pesto
  • 1/2 bag spinach
  • 1 bell pepper (any color) chopped
  • Salt and Pepper

Instructions
  1. Preheat oven to 350. Place salmon on baking sheet and season with salt and pepper. Bake for 15-20 minutes, or until done.
  2. Bring pot of water to a boil, add orzo and cook according to instructions on the package. With 1 minute left of cooking time, add spinach and bell pepper to orzo and cook just for 1 minute. Spinach will wilt. Drain everything together and return to pot.
  3. Add pesto to orzo mixture and stir well.
  4. Add orzo to bowl and top with salmon. Enjoy!
