Ingredients
Salad
- 4 cups salad greens spinach, arugula, mixed, romaine (whatever you like or have on hand)
- 1 cup purple cabbage shredded
- 1 cup carrot shredded
- 1 cup sprouts
- 1/2 cup tomato cherry or regular sliced (optional)
- 1 15-oz can white beans drained and rinsed
- 1 peach sliced
- 1 stalk scallion chopped, whites and greens
- basil leaves to garnish
- 2 handfuls pecans lightly salted
Lemon Vinaigrette
- 1/2 cup olive oil
- 2 large lemon juiced

Instructions
- Divide all salad ingredients evenly among two bowls.
- Whisk together (or shake in a jar) olive oil, lemon juice, salt and pepper and pour over salad. Enjoy!
