Ingredients
Salad
  • 4 cups salad greens spinach, arugula, mixed, romaine (whatever you like or have on hand)
  • 1 cup purple cabbage shredded
  • 1 cup carrot shredded
  • 1 cup sprouts
  • 1/2 cup tomato cherry or regular sliced (optional)
  • 1 15-oz can white beans drained and rinsed
  • 1 peach sliced
  • 1 stalk scallion chopped, whites and greens
  • basil leaves to garnish
  • 2 handfuls pecans lightly salted
Lemon Vinaigrette
  • 1/2 cup olive oil
  • 2 large lemon juiced

Instructions
  1. Divide all salad ingredients evenly among two bowls.
  2. Whisk together (or shake in a jar) olive oil, lemon juice, salt and pepper and pour over salad. Enjoy!
