  • Dressing
  • ½cup plain greek yogurt
  • 2tablespoons apple cider vinegar
  • 1teaspoon Dijon mustard
  • Salt and pepper
  • Salad
  • 1 can chickpeasdrained and rinsed, 14 ounce
  • 2medium celery ribschopped
  • 1small applecored and diced
  • 1cup grapeshalved
  • ¼cup green or red onionfinely diced
  • ½cup toasted walnuts
  • 9large lettuce leaves
  1. In a medium bowl whisk the yogurt, vinegar, and mustard with a pinch of salt and pepper to make the dressing.
  2. Gently fold in the remaining ingredients (except the lettuce leaves) to make the Waldorf salad. Divide onto lettuce leaves to serve.
Recipe Notes

You can serve this with a protein-rich side like a cheese stick or steamed edamame to round out the meal a bit more.
