Meal Prep Meatballs

Ingredients
- 1/2 yellow onion 1/4 cup finely diced
- 1/4 cup rolled oats
- 1/4 cup whole wheat flour
- 1 pound ground chicken or turkey
- 1 eggs
- 2 teaspoons dried basil
- 2 teaspoons garlic powder
- 1 teaspoon cumin
- 1-2 teaspoons chili paste
- pinch salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon fresh ground black pepper

Instructions
- Heat oven to 400°F. Spray a half-size baking sheet with cooking spray.
- In a medium bowl gently mix all ingredients together until spices have been evenly incorporated into the meat. Using a cookie scoop, scoop meat out into 1 ounce portions and roll into even balls with your hands.
- Bake for 10-15 minutes until cooked through (165°F). Use immediately or let cool to room temp before storing. Meatballs will last 3-4 days in the fridge; or freeze meatballs for up to 3 months by freezing them individually in a single layer before transferring to a storage container.
Recipe Notes
Using a fork when combining the meat and spices can help distribute the ingredients without overmixing and/or smushing the meat.
