  • 1-2cups leftover roasted vegetables
Wholesome Carbohydrates
  • 2 high-fiber tortillas
Lean Proteins
  • 1cup cooked shredded chicken
  • 1cup shredded part-skim mozzarella
Healthy Fats
  • 4teaspoons sun-dried tomato pesto
  1. Spread 2 teaspoons of pesto on each tortilla. Top the tortillas with the roast vegetables, chicken, and cheese.
  2. Microwave the tortillas, open faced, for 1 minute each and then fold in half.
