Extreme Veggie Tostadas

Ingredients
- 4 corn tortilla 6-inch
- 1 15-ounce can black beans
- 1 head lettuce
- 4 radishes
- 1 ripe avocado
- 1 lime
- 1 bunch cilantro
- 1 tomato
- 1 jalapeno
- 1 corn cob
- 2 ounces cotija cheese or feta cheese
- 1 tsp olive oil
- 1/2 tsp garlic powder

Instructions
- Drain and rinse black beans. Sprinkle with garlic powder and mash with fork or potato masher.
- Cut corn kernels off the cob, chop tomato, jalapeno, radishes and lettuce. Slice lime into wedges.
- Heat olive oil in skillet over medium to medium-high heat. Add tortillas to pan cooking for 3-4 minutes on each side. Remove done tortillas and repeat until all are stiff and toasty.
- Spread mashed black beans onto toasted tortilla. Top with veggies, cheese and cilantro and finish with a squeeze of lime.
