  • 4 corn tortilla 6-inch
  • 1 15-ounce can black beans
  • 1 head lettuce
  • 4 radishes
  • 1 ripe avocado
  • 1 lime
  • 1 bunch cilantro
  • 1 tomato
  • 1 jalapeno
  • 1 corn cob
  • 2 ounces cotija cheese or feta cheese
  • 1 tsp olive oil
  • 1/2 tsp garlic powder

  • 1 head lettuce
  • 4 radishes
  • 1 ripe avocado
  • 1 lime
  • 1 bunch cilantro
  • 1 tomato
  • 1 jalapeno
  • 1 corn cob
  • 2 ounces cotija cheese or feta cheese
  • 1 tsp olive oil
  • 1/2 tsp garlic powder

Instructions
  1. Drain and rinse black beans. Sprinkle with garlic powder and mash with fork or potato masher.
  2. Cut corn kernels off the cob, chop tomato, jalapeno, radishes and lettuce. Slice lime into wedges.
  3. Heat olive oil in skillet over medium to medium-high heat. Add tortillas to pan cooking for 3-4 minutes on each side. Remove done tortillas and repeat until all are stiff and toasty.
  4. Spread mashed black beans onto toasted tortilla. Top with veggies, cheese and cilantro and finish with a squeeze of lime.
