Ingredients
  • 15 ounce canned chickpeas
  • 1 large apple
  • 3 scallions
  • 1cup cilantro
  • 3tablepoons Tahini
  • 1 lemon
  • 1 tablepoon curry powder
  • 1/2teaspoon cinnamon
  • 1/2cup light coconut milk
  • 1teaspoon maple syrup
  • 4cups mixed greens or lettuce
  • 1/2cup almonds
  • 1/2cup feta
  • 2thick slices crusty whole wheat bakery bread
Instructions
  1. Drain and rinse chickpeas and add to a large bowl
  2. Chop apple and scallion and add to chickpeas. Add cilantro.
  3. In a separate bowl, mix together tahini, lemon, curry, cinnamon, coconut milk, salt, pepper, and maple syrup.
  4. Toss chickpeas with dressing and place over salad greens. Top with chopped almonds and feta cheese. Serve with a side of toasted crusty bread.
