Curried Chickpea Apple Salad with Feta & Greens

Ingredients
- 15 ounce canned chickpeas
- 1 large apple
- 3 scallions
- 1 cup cilantro
- 3 tablepoons Tahini
- 1 lemon
- 1 tablepoon curry powder
- 1/2 teaspoon cinnamon
- 1/2 cup light coconut milk
- 1 teaspoon maple syrup
- 4 cups mixed greens or lettuce
- 1/2 cup almonds
- 1/2 cup feta
- 2 thick slices crusty whole wheat bakery bread

Instructions
- Drain and rinse chickpeas and add to a large bowl
- Chop apple and scallion and add to chickpeas. Add cilantro.
- In a separate bowl, mix together tahini, lemon, curry, cinnamon, coconut milk, salt, pepper, and maple syrup.
- Toss chickpeas with dressing and place over salad greens. Top with chopped almonds and feta cheese. Serve with a side of toasted crusty bread.
