Chicken & Broccoli Stir Fry over Brown Rice

Ingredients
  • 1 tablespoon sesame oil
  • 3 cloves garlic
  • 1 knob fresh ginger
  • 2 chicken breasts about 1 pound of chicken total
  • 1 small onion
  • 1 head broccoli
  • 2 red bell pepper
  • 1 cup brown rice
  • 3 tablepoons low sodium soy sauce (for gluten-free soy sauce, look for "tamari")
  • 2 tablespoon mirin Optional
  • 1/4 cup sesame seeds
  • 1 cup cilantro

Instructions
  1. Follow instructions to cook your brown rice (either stove top or microwave).
  2. Prep your veggies by mincing the garlic and ginger, and chopping the onion, broccoli, and pepper. Chop chicken into bite-sized pieces.
  3. Heat a wok or large saute pan with sesame oil over medium heat and add chicken, and half the garlic and ginger and a splash of soy sauce. Stir frequently and cook until chicken is done. Season with a pinch of salt and pepper. Remove from pan.
  4. Add remaining sesame oil to the same pan and add onions. Cook until they begin to soften.
  5. Then add broccoli and bell peppers with 3 tablespoons soy sauce and 2 tablespoons mirin. Cook for 3-4 minutes or until your broccoli has reached your desired texture.
  6. Add chicken to stir-fry and cook just a minute longer to reheat.
  7. Scoop rice into bowls and top with stir-fry. Sprinkle with sesame seeds and cilantro if using.
