Belly Warming Red Lentil Soup

  • 1small onion
  • 2 carrots
  • 3cloves garlic
  • 5leaves kaleor other green like mustard, chard, collard, etc
  • 115-ounce can diced tomatoes
Wholesome Carbohydrates & Lean Protein
  • 1cup red lentils
Healthy Fat
  • 2tablspoons oilolive or canola
  • 4cups brothveggie, chicken, or beef broth
  • 1teaspoon dried thyme
  • 1tablespoon turmeric
  • Salt and pepper
  • 1/4cup unsweetened plain greek yogurtto garnish
  1. Dice onion, chop carrot, an slice garlic. Heat oil in a large soup pot over medium heat and add veggies. Season with a little salt and saute for 3-4 minutes, until soft.
  2. Add lentils, spices, tomatoes, and broth to pot, stir, cover and bring to a simmer. Let lentils simmer for 20 minutes.
  3. Wash and chop kale (or whatever green you decide to use) and add to pot. Taste broth and adjust seasonings if needed. Let simmer another 5 minutes until kale and lentils are tender.
  4. Ladle soup into bowls and top with a dollop of yogurt and sprinkle with fresh herbs if you have on hand.
