Belly Warming Red Lentil Soup

Ingredients
Veggies
- 1 small onion
- 2 carrots
- 3 cloves garlic
- 5 leaves kale or other green like mustard, chard, collard, etc
- 1 15-ounce can diced tomatoes

- 1 cup red lentils

- 2 tablspoons oil olive or canola
Seasonings
- 4 cups broth veggie, chicken, or beef broth
- 1 teaspoon dried thyme
- 1 tablespoon turmeric
- Salt and pepper
- 1/4 cup unsweetened plain greek yogurt to garnish

Instructions
- Dice onion, chop carrot, an slice garlic. Heat oil in a large soup pot over medium heat and add veggies. Season with a little salt and saute for 3-4 minutes, until soft.
- Add lentils, spices, tomatoes, and broth to pot, stir, cover and bring to a simmer. Let lentils simmer for 20 minutes.
- Wash and chop kale (or whatever green you decide to use) and add to pot. Taste broth and adjust seasonings if needed. Let simmer another 5 minutes until kale and lentils are tender.
- Ladle soup into bowls and top with a dollop of yogurt and sprinkle with fresh herbs if you have on hand.
