  • 1 pound radishes
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper
  • 1/4 cup feta cheese optional: dill or other fresh herbs

Instructions
  1. Preheat oven to 400 degrees F. Slice radishes in half lengthwise and toss with oil, vinegar and lightly season with salt and pepper.
  2. Place on a lined baking sheet and spread out so each radish has space. The more you crowd the pan, the less browning you will get on your radishes.
  3. Roast in the oven for 20-25 minutes until radishes are tender and golden brown.
  4. Garnish with feta and herbs if you have any on hand.
