Abundant Summer Pasta Salad

Ingredients
- 1/2 box fettuccini pasta whole wheat if you can find it
- 1/2 bag arugula
- 1 peach or nectarine, thinly sliced
- 4 ounces goat cheese
- 1 cup frozen edamame, shelled thawed
- 1/2 red onion thinly sliced
- 1/2 cup almonds chopped
- 3 tablespoon olive oil
- 2 tablespoons white balsamic vinegar

Instructions
- Cook pasta according to instructions on box. Drain and rinse when done cooking.
- Prep your fruits and veggies: slice your peaches (or nectarines) and onion, and chop almonds. Add to a large bowl with edamame, and arugula.
- Add pasta to the bowl and toss to combine. Add oil and vinegar and season with salt and pepper. Dish into bowls and enjoy!
