Deconstructed Shepherd’s Pie
The meat and veggie mixture can be made ahead of time and either refrigerated for 3 days for frozen in an airtight container for 3 months. Only prepare the potatoes when you’re ready to serve and enjoy.

Ingredients
  • 4 small baking potatoes 2.5-3 inch diameter
  • 1/4 cup unsweetened plain greek yogurt
  • 4 teaspoon butter
  • 1 small onion chopped
  • 1 pound lean ground turkey
  • 1 ½ cups broth
  • 2 teaspoon cornstarch
  • 2 cup frozen peas/carrots mix
  • 1 cup frozen cut green beans
  • 2 Tablespoon tomato paste
  • 1 Tablespoon Worcestershire
  • garlic powder
  • parsley
  • thyme

Instructions
  1. Pierce potatoes* with fork, and microwave using the POTATO function. (Alternate: microwave on high for about 4 minutes for 1 potato and add 1 minute per additional potato.) Once potatoes are done, cut them in half and fluff the middle with a fork; mix in 1T. Greek yogurt and 1 t. butter per potato.
  2. Spray a large nonstick skillet with cooking spray and heat over medium-high heat. Add onion and turkey, cook for 5 minutes.
  3. Whisk together broth and cornstarch, add to skillet. Add remaining ingredients. Lower heat to medium and let mixture simmer for about 5 minutes or until thickened.
  4. Serve each potato with 1 c. of meat/veggie mix.
