Ingredients
  • 2 chicken breasts
  • ½ cup mozzarella balls halved
  • 1 avocado
  • 4 cups salad greens the darker the better
  • 1 cup cherry tomatoes halved
  • ¼ cup fresh basil ripped into ribbons
Dressing
  • 1 garlic clove minced
  • 1 teaspoon dried basil
  • 1 tablespoon Dijon mustard
  • 1 lemon 1/2 of it juiced
  • 1/4 cup balsamic vinegar
  • 1/3 cup olive oil
  • 1/3 cup olive oil

Instructions
  1. Heat skillet over medium heat. Add chicken and cook until internal temperature reaches 165 degrees or it is white all the way through.
  2. While chicken cooks, make the dressing in a medium sized mason jar. Shake to combine.
  3. Chop lettuce, tomatoes and mozzarella.
  4. Remove chicken from skillet and slice. Assemble salad.
