Avocado Caprese Chicken Salad with Balsamic Dressing

Ingredients
- 2 chicken breasts
- ½ cup mozzarella balls halved
- 1 avocado
- 4 cups salad greens the darker the better
- 1 cup cherry tomatoes halved
- ¼ cup fresh basil ripped into ribbons
Dressing
- 1 garlic clove minced
- 1 teaspoon dried basil
- 1 tablespoon Dijon mustard
- 1 lemon 1/2 of it juiced
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1/3 cup olive oil

Instructions
- Heat skillet over medium heat. Add chicken and cook until internal temperature reaches 165 degrees or it is white all the way through.
- While chicken cooks, make the dressing in a medium sized mason jar. Shake to combine.
- Chop lettuce, tomatoes and mozzarella.
- Remove chicken from skillet and slice. Assemble salad.
