Shrimp Tacos with Corn on the Cob and a Side of Summer Fruit

Ingredients
  • 1.5 pound shrimp shelled and deveined
  • 3 clove garlic minced
  • 1 lime for 1 teaspoon of zest
Homemade Taco Seasoning
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper optional
  • 15 ounces canned black beans drained and rinsed
  • 2 avocados sliced
  • 8 6-inch tortillas corn or flour
  • Your choice of toppings (tacos): feta cheese, lettuce, cabbage, tomato, olives, hot sauce, cilantro
  • 4 corn cobs
Fruit Salad
  • 4 mangoes peeled, sliced, chopped
  • 4 kiwi peeled and chopped
  • 4 kiwi peeled and chopped

Instructions
  1. In a medium sized bowl add garlic, lime zest and homemade taco seasoning to shrimp, stir to combine. Allow to marinate for 15-30 minutes.
  2. Shuck, clean corn and prepare for grilling.
  3. Heat grill to approximately 375 degrees (medium to high heat). Once heated lay corn right onto grill. Leave for 2-3 minutes, turn a 1/4 turn and so on until all sides are cooked and have a small amount of char.
  4. Heat black beans in a small sauce pan.
  5. Prepare toppings. Cut fruit, mix and set aside.
  6. Spray grill pan with avocado oil (or any other spray oil), lay shrimp onto grill pan. Take corn off grill and set aside. Set grill pan with shrimp inside grill. Cook shrimp approximately 1 1/2 minutes on each side.
  7. Right before removing shrimp heat tortillas on grill.
  8. Remove shrimp and tortillas from grill. Assemble tacos with shrimp, black beans, sliced avocado and other desired toppings. Serve with a side of corn on the cob and summer fruit.
Recipe Notes

Can be made dairy-free by omitting cheese and gluten-free by choosing corn tortillas.
