Pan Fried Gnocchi with White Beans and Kale

  • 1 package whole wheat gnocchi
  • 1 tablepoon olive oil
  • 3 clove garlic minced
  • 15 ounces canned diced tomatoes
  • 1 carrot shredded
  • 15 ounces canned cannellini beans
  • 1 bunch kale
  • 0.5 cup vegetable stock
  • 1 teaspoon red pepper flakes adjust to your spice preference
  • 1/4 cup Parmesan cheese to grate on top

  • 15 ounces canned cannellini beans

Instructions
  1. Heat olive oil in skillet and fry gnocchi until brown and crispy. Remove and set aside.
  2. While gnocchi cooks, grate carrot and cut kale into ribbons.
  3. Add garlic, salt, pepper and pepper flakes to the pan and stir until fragrant, add in grated carrot. When carrot is soft, add in tomatoes, beans, stock and gnocchi. Let simmer and water from tomatoes evaporate.
  4. Fold in kale and serve with parmesan cheese on top.
